Almond, Sesame seed and Spelt biscuits




200g spelt flour
150g unsalted organic butter (at room temperature)
1 organic egg
1/2 vanilla bean pod
90g of rapadura or brown sugar/honey
50g finely chopped activated almonds*
50g sesame seeds lightly toasted



1. beat butter and rapadura together with electric beater until creamy looking.
2. add egg and vanilla bean (scoop out middle seeds of vanilla bean.
3. mix in the flour
4. put in fridge for half an hour
5. Pre heat oven to 180 degrees Celsius
6. place almonds and sesames on separate plates and roll into small balls (to make biscuit 5 cm wide). Press one side of ball onto almonds and slightly flatten at same time, then flip over and do same to other side but into sesames, place on tray lined with baking paper and repeat for other biscuits
7. put in oven for 10-12 mins until golden brown
8. leave to cool on wire rack.

Make 25-30 biscuits

*activated nuts are nuts that have been soaked over night in water and the rinsed and baked at 50 degrees Celsius for 5 hours in oven. This process removes phytic acid and other inhibitor. Therefore the nuts ate more absorbable and better for you.

**one other thing nuts should never be heated past 50 degrees celcius otherwise it destroys there oils and makes them go rancid. For this recipe however I have heated the nuts past this temperature as the recipe doesn't work otherwise. There are so few nuts on these biscuits on the scheme of things it isn't that bad. It would be bad for your health however if you were consuming vegetable oils (soybean, canola, sunflower), not cold pressed olive oil, and eating fried foods. You can guarantee that these oils are rancid. This is why saturated fats are so good to cook with. As they don't contain and double bonds and they are very stable. Things like lard, ghee, butter and coconut oil are great to cook with at higher temperatures. But things like Cold pressed Extra virgin olive oil and flax seed oil should be A.kept in fridge in dark glass container and B. not used to cook with, only used as dressing. I will do more on fats soon.
