Anzac Biscuits

Today being Anzac day, I thought I'd make Anzac biscuits...

1 cup of bio dynamic/organic oats
1 cup of spelt flour
1 cup of shredded coconut
1/2 cup of rapadura
2 tablespoons of maneuka honey
1 teaspoon of bicarb soda
125g melted organic unsalted butter
pinch of salt

  1. Preheat oven to 180 degrees Celcuis
  2. Combined all dry ingredients in a large mixing bowl
  3. Add in honey, rapadura and melted butter and combined well (you may need to use your hands)
  4. Roll biscuit mix into small balls and place on a baking tray
  5. Using a folk squash down carefully without them falling apart. 
  6. Cook for 10-12 minutes until golden brown
  7. Put on cooling rack
